Garlic Fragrant Pork Ribs
Ingredients
- 500g pork ribs
- 10 diced garlic cloves
- 1/2 onion
- A few slices of ginger (for blanching the pork ribs)
- A few slices of ginger (for the rice cooker)
- A few squirts of soy sauce
- 2 teaspoons of oyster sauce
- 2 pinches of salt
- A dash of white pepper
- A dash of dark soy sauce
Directions
- Cut the pork ribs into individual ribs.
- Put the ribs in a large bowl and soak it in water so the blood comes out for about 29 minutes.
- Pour out the water and wash each pork rib and squeeze out any blood if you can.
- Blanch the pork ribs by filling a wok full of cold water and then put the ribs in.
- Add 2 splashes of Chinese cooking wine.
- Add a few slices of ginger and a stick of spring onion.
- Blanch for 10 minutes or until you see all the impurities come out.
- Pour out the pork ribs and wash each rib again individually so remove any cooked blood that's come out of the bone or any impurities that have stuck to the meat. Discard the onion and any slices of ginger from the wok.
- Put the pork ribs into a bowl and set aside.
- Slice the onion into long slivers of onion.
- Lay the onion on the bottom of the rice cooker.
- Add the few slices of ginger to the bottom of the rice cooker.
- Dice the garlic and put into a small bowl.
- Heat oil until very hot and then pour it over the garlic.
- Marinate the pork ribs with:
- A few squirts of soy sauce.
- 2 teaspoons of oyster sauce.
- 2 pinches of salt.
- A dash of white pepper.
- A dash of dark soy sauce.
- Add in the garlic and oil.
- Put on a single use plastic food glove and mix well.
- Add the pork ribs to the bed of onions in the rice cooker.
- Add 1/2 a small bowl of water.
- Turn on the rice cooker and start cooking.
