Chicken And Mixed Mushroom Chinese Soup

Main Ingredients:
- Dried mixed mushrooms (soaked)
- 1 chicken, chopped into smaller pieces
- Spices and Seasonings:
- 2 slices of ginger
- 2 splashes of cooking wine
- Salt (to taste)
Directions
- Soak the dried mixed mushrooms
- Prepare the chicken by chopping it up into smaller pieces
- Wash the pieces thoroughly
- Remove any yellow bits from the chicken
- Blanch the chicken
- Slice 2 pieces of ginger
- Get the wok
- Add cold water
- Add chicken
- Add 2 splashes of cooking wine
- Add the 2 pieces of ginger
- Slowly bring to boil to get rid of all the impurities
- When finished boiling for about 5-10 mins, pour out into the sink
- Wash the meat
- Transfer to a soup pot
- Add the soaked mixed mushrooms
- Boil for 20 mins
- Add salt to taste
