Braised Pork Feet
A hearty and savory pork feet stew with optional potato, carrot, raddish and peanuts using the pressure cooker.

- Cooking Time: 1.5 hrs
- Serves: 2
Ingredients:
- 500g pork feet
- Optional:
- 1 potato
- 1 carrot
- 1/2 White Raddish (Cut into cubes)
- 1 spring onion
- 4 big slices of ginger (2 for blanching 2 slices of ginger for the spice bag)
- 2 splashes of salted Chinese cooking wine
- 1 full tablespoon of yellow bean sauce
- 1 full tablespoon of bean sauce
- 2 tablespoons of soy sauce
- 0.5 tablespoon of dark soy sauce
- Gather onto plate:
- 10 pieces of lump sugar
- A handful of raw shelled Australian Virginia peanuts
- Spice Bag:
- 1 bay leaf
- 1 small piece of Chinese cassia
- 1 big piece of star anise
- 1 black cardamom (tsao-ko amomum)
Steps
- Defrost 500g pork feet for 30 mins by putting it into water to draw out any blood
- Wash and cut the spring onion and tie it into a knot
- Slice another 4 slices of ginger 2 for the spice bag 2 for blanching the meat
- Wash a potato
- Wash, peel and slice a carrot into thirds
- Gather all these things onto a plate:
- 2 slices of ginger, 1 bay leaf, 1 small piece of Chinese cassia, 1 big piece of star anise, 1 black cardamom (tsao-ko amomum), 10 pieces of lump sugar
- Put everything on the plate into the spice bag except the lump sugar
- Get wok and fill with pork feet and then with cold water just enough to cover the pork
- Add a 2 splashes of salted chinese cooking wine, spring onion and slices of ginger
- Bring to a boil, them boil for another 10 mins so the pork to remove pork odour
- Pour out the pork into the sink and wash the pieces, especially where there is exposed bone marrow
- Add the washed pork to the pressure cooker
- Add spice bag and lump sugar into the pressure cooker
- Add the potato, carrot and a handful of raw shelled Australian Virginia peanuts into the pressure cooker
- Add 1 full tablespoon of yellow bean sauce and 1 full tablespoon of bean sauce into the pressure cooker
- Add 2 tablespoons of soy sauce and 0.5 tablespoon of dark soy sauce
- Add water until it almost covers the pork bones
- Close the lid
- Set to steam and pressure cook for 10 mins
- Once cooking is done, let it sit in the pressure cooker for 20 mins
- Open the lid, take out the spice bag
- Boil the pork feet to make the meat tastier and reduce the sauce a little
- Serve in bowl
